Cuisine of Gujarat
1. Patra
Patra is a fried vegetarian snack from Gujarati cuisine. Colocasia leaves, or arbi, is the core of this dish. It is soft and sweet, tangy, and a little spicy.
2. Dhokla
Dhokla is a steamed savory cake made from ground, fermented batter of rice and lentils (Chickpea, Pigeon pea and Urad etc.)
3. Gujarati Kadhi
Gujarati kadhi is a sweet tangy buttermilk/dahi-based dish made with gram flour, spices, herbs and seasonings.
4. Undhiyu
Undhiyu is a Gujarati mixed vegetable dish that is a regional specialty of Surat, Gujarat, India. The name of this dish comes from the Gujarati word "undhu", which translates to upside down, since the dish is traditionally cooked upside down underground in earthen pots, termed "matlu", which are fired from above. Fresh vegetables used in this dish include green beans, small eggplant, potatoes etc.
5. Mango Shrikhand
Mango Shrikhand is a creamy & luxurious Indian sweet dish made with yogurt, mango pulp, and sugar. In the household it is often had with puri!
